The dish
The aubergine is cut into sticks, left half an hour in salted milk to take the bitterness out, floured and fried hot. The cane honey (sugar-cane molasses, not bee honey) comes from the only factory left in Europe, in Frigiliana.
Where it comes from
- AubergineMarket gardens on the Vélez plain; in summer, striped aubergine, sweeter.
- Cane honeyThe Frigiliana mill, Europe's last cane-honey factory.
