Ajoblanco with muscat grapes

The Axarquía's cold soup from before gazpacho existed: marcona almonds, softened garlic, the day's bread, mountain olive oil and vinegar. Served very cold with halved muscat grapes from Sayalonga on top.

The dish

We make it every morning with marcona almonds from the sierra, blanched and peeled here, and yesterday's bread from the bakery on the corner. The garlic is blanched so it doesn't bite. Out of grape season it comes with green apple or melon.

Where it comes from

  • Marcona almondsFrom an almond grove in Canillas de Aceituno; we buy them in the shell in September for the whole year.
  • Muscat grapesFrom the Sayalonga vineyards, the same grapes that become raisins on the drying beds.
  • OilVerdial from the Axarquía sierra, first cold pressing.
